Wine Cellar 2009
We are pleased to introduce the selections for 2009 Wine Cellar*, which include the use of organically grown varietal grapes.**
Background
Since the introduction of Wine Cellar (*formerly known as Project Wine Cellar) offerings back in 1971, the wine world has changed tremendously in both quality and range of varietal grape offerings. One of the new trends has been a slow but ever-increasing interest in organic food products, including wine. **At this time, we cannot offer a 100% organic wine in that the use of approved clearing agents and preservatives in our kits that guarantee a perfect result makes the finished wine non-organic. If these approved clearing agents and preservatives are not used according to our instructions, the resulting wine will quickly oxidize and spoil, rendering the wine undrinkable in a short period of time. We believe that the ingredients and the process we use to make our kits offer the winemaker and wine-drinker the best outcome to ensure a consistent and first-class wine.

This dry red wine features outstanding flavours of blueberry, cedar and spicy pepper. The finish is long and smooth with soft, well integrated grainy tannins. Starting Specific Gravity 1.099. Medium to full body.

ORGANIC SAUVIGNON BLANC – February 2009
A dry crisp white wine with aromas of grapefruit, gooseberry and citrus. The taste is fresh and vibrant with notes of lemon/lime and sweet melon. Starting Specific Gravity 1.092. Medium body.
